Cinco de Mayo Street Taco Lunch
One of the most anticipated employee meals at MariCorp is the annual Cinco de Mayo lunch, and this year everyone was treated to a street taco meal with all the fixings. Front and center was pulled pork carnitas, marinated and slow roasted, along with chicken adobo, Mexican street corn, and queso dip. Sides included guacamole, pico sauce, jalapeños, sour cream, Mexican farm cheese and lime wedges. Making an appearance this year was hominy casserole. Serving options included corn and flour tortillas, tortilla chips and corn chips.
